- Chorizo - 200 grams
- Bolillo rolls - 2 pieces
- Eggs - 4 large
- Avocado - 1 medium, sliced
- Fresh cilantro - 2 tablespoons, chopped
- Red onion - 1/4 cup, thinly sliced
- Tomato - 1 medium, diced
- Lime - 1, for juice
- Salt - to taste
- Pepper - to taste
- Olive oil - 1 tablespoon
Steps
- In a skillet over medium heat, add the chorizo and cook for about 5-7 minutes until browned and fully cooked, breaking it apart with a spatula.
- While the chorizo is cooking, heat another skillet with olive oil over medium heat.
- Crack the eggs into the skillet and scramble until cooked through, about 3-4 minutes. Season with salt and pepper.
- Slice the bolillo rolls in half and lightly toast them in the same skillet or on a grill.
- Once the chorizo and eggs are done, assemble the tortas by layering the chorizo, scrambled eggs, sliced avocado, diced tomato, red onion, and chopped cilantro on each bolillo half.
- Squeeze fresh lime juice over the top of each torta before closing them.
