- Sweet potato - 250 grams
- All-purpose flour - 50 grams
- Cornmeal - 30 grams
- Baking powder - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Water - 4 tablespoons
- Avocado - 1 medium
- Lime - 1 (juice only)
- Fresh cilantro - 2 tablespoons (chopped)
- Tomato - 1 small (diced)
- Red onion - 1 tablespoon (finely chopped)
- Chili powder - 1/4 teaspoon
Steps
- Peel and chop the sweet potato into small cubes. Boil in water for about 15 minutes or until tender, then drain and mash.
- In a mixing bowl, combine the mashed sweet potato, all-purpose flour, cornmeal, baking powder, cinnamon, and salt. Mix until a dough forms.
- Add olive oil and water gradually to the mixture, stirring until smooth and cohesive.
- Form the mixture into small patties, about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and lightly grease it with a bit of olive oil. Cook the patties for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, prepare the avocado salsa by mashing the avocado in a bowl. Add lime juice, cilantro, diced tomato, red onion, and chili powder. Mix well.
- Serve the tortas hot with the avocado salsa on the side.
