Ingredients

  • Sweet potato - 250 grams
  • All-purpose flour - 50 grams
  • Cornmeal - 30 grams
  • Baking powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 4 tablespoons
  • Avocado - 1 medium
  • Lime - 1 (juice only)
  • Fresh cilantro - 2 tablespoons (chopped)
  • Tomato - 1 small (diced)
  • Red onion - 1 tablespoon (finely chopped)
  • Chili powder - 1/4 teaspoon

Steps

  1. Peel and chop the sweet potato into small cubes. Boil in water for about 15 minutes or until tender, then drain and mash.
  2. In a mixing bowl, combine the mashed sweet potato, all-purpose flour, cornmeal, baking powder, cinnamon, and salt. Mix until a dough forms.
  3. Add olive oil and water gradually to the mixture, stirring until smooth and cohesive.
  4. Form the mixture into small patties, about 1.5 cm thick.
  5. Heat a non-stick skillet over medium heat and lightly grease it with a bit of olive oil. Cook the patties for about 4-5 minutes on each side until golden brown.
  6. While the patties are cooking, prepare the avocado salsa by mashing the avocado in a bowl. Add lime juice, cilantro, diced tomato, red onion, and chili powder. Mix well.
  7. Serve the tortas hot with the avocado salsa on the side.
