Ingredients

  • Bolillo bread - 2 pieces
  • Halal chicken breast - 200 grams
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Tomato - 300 grams, chopped
  • Onion - 1 small, chopped
  • Chipotle pepper in adobo sauce - 1, minced
  • Vegetable oil - 2 tablespoons
  • Lime - 1, juiced
  • Fresh cilantro - 1/4 cup, chopped

Steps

  1. In a bowl, mix the minced garlic, cumin, oregano, salt, and black pepper. Add the chicken breast and coat it well with the marinade. Allow it to marinate for at least 20 minutes.
  2. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest before slicing.
  3. In the same skillet, add another tablespoon of oil, followed by the chopped onion. Sauté until translucent, then add the chopped tomatoes and minced chipotle pepper. Cook for about 10 minutes until the tomatoes break down and form a sauce. Adjust salt to taste.
  4. Slice the bolillo bread in half, creating a pocket. Fill each half with sliced chicken and drizzle with fresh lime juice. Spoon the tomato sauce generously over the sandwich.
  5. Garnish with chopped cilantro and serve immediately while hot.
