Ingredients

  • Zucchini - 100 grams
  • Carrot - 100 grams
  • Red bell pepper - 50 grams
  • Onion - 50 grams
  • Garlic - 2 cloves
  • Chickpeas - 100 grams (cooked)
  • Cilantro - 2 tablespoons (chopped)
  • Cumin - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Egg - 1 large
  • Breadcrumbs - 50 grams
  • Bolillo rolls - 2
  • Avocado - 1 (for topping)
  • Lettuce - 2 leaves
  • Tomato - 1 (sliced)

Steps

  1. Finely chop the zucchini, carrot, red bell pepper, onion, and garlic.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped vegetables and garlic until softened, about 5-7 minutes.
  3. In a mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
  4. Add the sautéed vegetables, cilantro, cumin, chili powder, salt, black pepper, egg, and breadcrumbs to the bowl, and mix until combined.
  5. Form the mixture into two patties, about 1.5 cm thick.
  6. In the same skillet, add another tablespoon of olive oil and cook the patties over medium heat for about 4-5 minutes on each side, until golden brown and cooked through.
  7. While the patties are cooking, slice the bolillo rolls in half and toast them lightly if desired.
  8. Assemble the tortas by placing a patty on the bottom half of each roll, topped with lettuce, sliced tomato, and avocado.
  9. Cover with the top half of the roll and serve immediately.
