Ingredients
- Zucchini - 100 grams
- Carrot - 100 grams
- Red bell pepper - 50 grams
- Onion - 50 grams
- Garlic - 2 cloves
- Chickpeas - 100 grams (cooked)
- Cilantro - 2 tablespoons (chopped)
- Cumin - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Egg - 1 large
- Breadcrumbs - 50 grams
- Bolillo rolls - 2
- Avocado - 1 (for topping)
- Lettuce - 2 leaves
- Tomato - 1 (sliced)
Steps
- Finely chop the zucchini, carrot, red bell pepper, onion, and garlic.
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped vegetables and garlic until softened, about 5-7 minutes.
- In a mixing bowl, mash the cooked chickpeas with a fork until mostly smooth, leaving some chunks for texture.
- Add the sautéed vegetables, cilantro, cumin, chili powder, salt, black pepper, egg, and breadcrumbs to the bowl, and mix until combined.
- Form the mixture into two patties, about 1.5 cm thick.
- In the same skillet, add another tablespoon of olive oil and cook the patties over medium heat for about 4-5 minutes on each side, until golden brown and cooked through.
- While the patties are cooking, slice the bolillo rolls in half and toast them lightly if desired.
- Assemble the tortas by placing a patty on the bottom half of each roll, topped with lettuce, sliced tomato, and avocado.
- Cover with the top half of the roll and serve immediately.
