Ingredients

  • 2 bolillo rolls
  • 2 medium poblano peppers
  • 100 grams queso fresco, crumbled
  • 1 medium avocado, sliced
  • 1 small red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Fresh cilantro for garnish
  • Oil for grilling

Steps

  1. Preheat the grill or a skillet over medium heat.
  2. Roast the poblano peppers on the grill or in the skillet until the skin is blistered and charred, about 8-10 minutes, turning occasionally.
  3. Once charred, place the peppers in a plastic bag for about 5 minutes to steam, then peel off the skin, remove the seeds, and slice into strips.
  4. In a small bowl, mix mayonnaise, lime juice, garlic powder, and a pinch of salt to make the spread.
  5. Slice the bolillo rolls in half and toast them lightly on the grill or skillet until golden brown.
  6. Spread the mayonnaise mixture on the inside of each toasted bolillo roll.
  7. Layer the roasted poblano strips, crumbled queso fresco, avocado slices, and red onion on the bottom half of each roll.
  8. Top with fresh cilantro and close the sandwich with the other half of the bolillo roll.
  9. Serve immediately with a side of your favorite salsa or chips.
