- 2 bolillo rolls
- 2 medium poblano peppers
- 100 grams queso fresco, crumbled
- 1 medium avocado, sliced
- 1 small red onion, thinly sliced
- 1/2 cup mayonnaise
- 1 tablespoon lime juice
- 1/2 teaspoon garlic powder
- Salt to taste
- Fresh cilantro for garnish
- Oil for grilling
Steps
- Preheat the grill or a skillet over medium heat.
- Roast the poblano peppers on the grill or in the skillet until the skin is blistered and charred, about 8-10 minutes, turning occasionally.
- Once charred, place the peppers in a plastic bag for about 5 minutes to steam, then peel off the skin, remove the seeds, and slice into strips.
- In a small bowl, mix mayonnaise, lime juice, garlic powder, and a pinch of salt to make the spread.
- Slice the bolillo rolls in half and toast them lightly on the grill or skillet until golden brown.
- Spread the mayonnaise mixture on the inside of each toasted bolillo roll.
- Layer the roasted poblano strips, crumbled queso fresco, avocado slices, and red onion on the bottom half of each roll.
- Top with fresh cilantro and close the sandwich with the other half of the bolillo roll.
- Serve immediately with a side of your favorite salsa or chips.
