Ingredients

  • Chicken breast - 300 grams
  • Olive oil - 2 tablespoons
  • Lime juice - 1 tablespoon

  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bolillo rolls - 2 units
  • Avocado - 1/2, sliced
  • Tomato - 1 medium, sliced
  • Red onion - 1/4, thinly sliced
  • Lettuce - 2 leaves
  • Fresh cilantro - 2 tablespoons, chopped
  • Sour cream - 2 tablespoons (optional)

Steps

  1. In a bowl, mix olive oil, lime juice, minced garlic, cumin, paprika, salt, and black pepper to create a marinade.
  2. Cut the chicken breast into thinner fillets for quicker cooking and marinate them in the mixture for at least 15 minutes.
  3. Heat a grill or skillet over medium-high heat and cook the marinated chicken for 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
  4. While the chicken is cooking, prepare the bolillo rolls by slicing them in half and toasting them lightly on the grill or in a toaster.
  5. Once the chicken is cooked, remove it from the heat and let it rest for a few minutes before slicing it into strips.
  6. To assemble the tortas, place a lettuce leaf on the bottom half of each toasted bolillo, followed by the sliced chicken, avocado, tomato, red onion, and cilantro.
  7. If desired, add a dollop of sour cream on top before placing the other half of the bolillo on top.
