Ingredients

  • 2 large poblano peppers
  • 1 cup cooked black beans, drained and rinsed
  • 1/2 cup cooked quinoa
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt - to taste
  • Pepper - to taste
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 2 whole wheat burger buns
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the poblano peppers on a baking sheet and roast in the oven for about 20 minutes, turning occasionally, until the skins are blistered and charred.
  3. Remove the peppers from the oven, cover them with a kitchen towel, and let them steam for 10 minutes to loosen the skins.
  4. While the peppers are steaming, in a mixing bowl, combine the black beans, cooked quinoa, chopped onion, minced garlic, ground cumin, smoked paprika, salt, pepper, and breadcrumbs. Mash slightly until well mixed but still chunky.
  5. Form the mixture into two patties.
  6. In a skillet, heat 1 tablespoon of olive oil over medium heat. Cook the patties for about 5-6 minutes on each side until golden brown and heated through.
  7. While the patties are cooking, peel the skins off the roasted poblano peppers, remove the stems and seeds, and set aside.
  8. To make the avocado crema, blend the avocado, lime juice, cilantro, salt, and a splash of water until smooth.
  9. Toast the whole wheat burger buns in the same skillet until golden.
  10. Assemble the tortas by placing a black bean patty on each bun, topping with the roasted poblano pepper, and drizzling with the avocado crema. Serve immediately.
