Ingredients
- 2 large poblano peppers
- 1 cup cooked black beans, drained and rinsed
- 1/2 cup cooked quinoa
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt - to taste
- Pepper - to taste
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
- 2 whole wheat burger buns
- 1 ripe avocado
- 1 tablespoon lime juice
- 1/4 cup fresh cilantro, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Place the poblano peppers on a baking sheet and roast in the oven for about 20 minutes, turning occasionally, until the skins are blistered and charred.
- Remove the peppers from the oven, cover them with a kitchen towel, and let them steam for 10 minutes to loosen the skins.
- While the peppers are steaming, in a mixing bowl, combine the black beans, cooked quinoa, chopped onion, minced garlic, ground cumin, smoked paprika, salt, pepper, and breadcrumbs. Mash slightly until well mixed but still chunky.
- Form the mixture into two patties.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Cook the patties for about 5-6 minutes on each side until golden brown and heated through.
- While the patties are cooking, peel the skins off the roasted poblano peppers, remove the stems and seeds, and set aside.
- To make the avocado crema, blend the avocado, lime juice, cilantro, salt, and a splash of water until smooth.
- Toast the whole wheat burger buns in the same skillet until golden.
- Assemble the tortas by placing a black bean patty on each bun, topping with the roasted poblano pepper, and drizzling with the avocado crema. Serve immediately.
