- Large ripe tomatoes - 2
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Bread crumbs - 1/2 cup
- Egg - 1 large
- Avocado - 1, sliced
- Lettuce leaves - 4
- Whole wheat burger buns - 2
- Queso fresco - 50 grams, crumbled
Steps
- Preheat the oven to 200°C (400°F).
- Slice the tomatoes in half and scoop out the seeds, creating a hollow shell. Place them cut-side up on a baking sheet.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, sautéing until softened, about 3-4 minutes.
- In a bowl, combine the sautéed onion and garlic with the scooped-out tomato pulp, cilantro, cumin, chili powder, salt, black pepper, bread crumbs, and the egg. Mix until well combined.
- Fill the hollowed tomatoes with the mixture, pressing down gently to pack it in. Drizzle the remaining olive oil over the tops.
- Bake in the preheated oven for 15-20 minutes until the tomatoes are tender and the filling is cooked through.
- While the tomatoes are baking, lightly toast the burger buns.
- Assemble the tortas by placing a lettuce leaf on the bottom half of each bun, followed by the baked tomato, avocado slices, and crumbled queso fresco. Top with the other half of the bun.
