- Huitlacoche - 200 grams

- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Ground cumin - 1/4 teaspoon
- Corn tortillas - 2 pieces
- Bolillo rolls - 2 pieces
- Avocado - 1, sliced
- Lime - 1, for juice
- Salsa verde - 100 grams
Steps
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the huitlacoche, salt, black pepper, and ground cumin. Cook for 5-7 minutes until the huitlacoche is heated through and slightly browned.
- Remove from heat and stir in the chopped cilantro. Adjust seasoning if needed.
- While the huitlacoche mixture is cooking, warm the corn tortillas in a separate skillet for about 30 seconds on each side.
- Slice the bolillo rolls in half and toast them lightly if desired.
- To assemble, place a spoonful of the huitlacoche mixture on the bottom half of each bolillo roll, add a few slices of avocado, and drizzle with lime juice.
- Top with salsa verde and cover with the top half of the roll. Serve immediately.
