Ingredients

  • Black beans - 400 grams (canned, drained and rinsed)
  • Cooked quinoa - 100 grams
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Cornmeal - 50 grams
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Avocado - 1, sliced
  • Tomato - 1, sliced
  • Lettuce leaves - 4
  • Whole wheat burger buns - 2

Steps

  1. In a mixing bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Add cooked quinoa, chopped red onion, minced garlic, cumin, chili powder, cornmeal, cilantro, salt, and pepper to the mashed beans. Mix until well combined.
  3. Form the mixture into two patties, about 1.5 cm thick.
  4. Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  5. While the patties are cooking, slice the avocado and tomato, and prepare the lettuce leaves.
  6. To assemble the tortas, place a patty on the bottom half of each burger bun, add avocado slices, tomato slices, and a few lettuce leaves. Top with the other half of the bun.
  7. Serve immediately with your choice of salsa or hot sauce.
