Ingredients

  • Black beans - 200 grams (cooked and mashed)
  • Onion - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cilantro - 2 tablespoons (chopped)
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Cornmeal - 2 tablespoons
  • Olive oil - 2 tablespoons (for frying)
  • Bolillo rolls - 2 (or any soft bread rolls)
  • Avocado - 1 (sliced)
  • Tomato - 1 (sliced)
  • Lettuce - 4 leaves
  • Lime - 1 (cut into wedges)
  • Sour cream or yogurt - for serving (optional)

Steps

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes.
  2. In a large bowl, combine the mashed black beans, sautéed onions and garlic, chopped cilantro, cumin, chili powder, salt, pepper, and cornmeal. Mix well until combined.
  3. Form the mixture into two patties, approximately 1.5 inches thick.
  4. In the same skillet, add another tablespoon of olive oil and heat over medium-high heat. Add the patties and cook for about 4-5 minutes on each side until golden brown and heated through.
  5. While the patties are cooking, slice the bolillo rolls in half and lightly toast them on another skillet or in a toaster.
  6. Assemble the tortas by placing a black bean patty on the bottom half of each roll. Top with sliced avocado, tomato, and lettuce. Add a dollop of sour cream or yogurt if desired.
  7. Serve with lime wedges on the side and enjoy your Torta de Frijol!
