Torta de Frijol

- Black beans - 200 grams (cooked and mashed)
- Onion - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Cilantro - 2 tablespoons (chopped)
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Cornmeal - 2 tablespoons
- Olive oil - 2 tablespoons (for frying)
- Bolillo rolls - 2 (or any soft bread rolls)
- Avocado - 1 (sliced)
- Tomato - 1 (sliced)
- Lettuce - 4 leaves
- Lime - 1 (cut into wedges)
- Sour cream or yogurt - for serving (optional)
Steps
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until soft and translucent, about 3-4 minutes.
- In a large bowl, combine the mashed black beans, sautéed onions and garlic, chopped cilantro, cumin, chili powder, salt, pepper, and cornmeal. Mix well until combined.
- Form the mixture into two patties, approximately 1.5 inches thick.
- In the same skillet, add another tablespoon of olive oil and heat over medium-high heat. Add the patties and cook for about 4-5 minutes on each side until golden brown and heated through.
- While the patties are cooking, slice the bolillo rolls in half and lightly toast them on another skillet or in a toaster.
- Assemble the tortas by placing a black bean patty on the bottom half of each roll. Top with sliced avocado, tomato, and lettuce. Add a dollop of sour cream or yogurt if desired.
- Serve with lime wedges on the side and enjoy your Torta de Frijol!
