Ingredients

  • Chorizo sausage - 200 grams
  • Bolillo rolls - 2 pieces
  • Avocado - 1 medium
  • Red onion - 50 grams
  • Tomato - 1 medium
  • Fresh cilantro - 10 grams
  • Lime - 1 unit
  • Cheese (Queso Fresco) - 50 grams
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat a skillet over medium heat.
  2. Remove the casing from the chorizo sausage and add it to the skillet, cooking for about 8-10 minutes until browned and cooked through.
  3. While the chorizo is cooking, slice the bolillo rolls in half and toast them lightly in a separate pan or toaster.
  4. Dice the red onion and tomato, and chop the cilantro finely.
  5. In a bowl, mash the avocado and add the juice of half a lime, salt, and pepper to taste.
  6. Once the chorizo is cooked, assemble the tortas by spreading the mashed avocado on the bottom half of each bolillo roll.
  7. Top the avocado with a generous amount of chorizo, followed by diced tomato, red onion, and crumbled queso fresco.
  8. Finish with fresh cilantro and a squeeze of lime juice on top.
  9. Place the top half of the bolillo rolls to close the tortas and serve immediately.
