Ingredients

  • Shrimp, peeled and deveined - 300 grams
  • Garlic, minced - 2 cloves
  • Cilantro, chopped - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Cornmeal - 3 tablespoons
  • Egg - 1 large
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Bolillo rolls - 2
  • Avocado, sliced - 1/2
  • Tomato, sliced - 1 medium
  • Lettuce leaves - 2
  • Mayonnaise - 2 tablespoons

Steps

  1. In a food processor, combine the shrimp, garlic, cilantro, lime juice, cornmeal, egg, salt, black pepper, and cayenne pepper. Pulse until the mixture is well combined but still slightly chunky.
  2. Form the shrimp mixture into two patties, about 1.5 cm thick.
  3. Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for 4-5 minutes on each side or until golden brown and cooked through.
  4. While the patties are cooking, lightly toast the bolillo rolls.
  5. Assemble the tortas by spreading mayonnaise on the bottom half of each roll, then adding the shrimp patty, avocado slices, tomato slices, and lettuce leaves.
  6. Top with the other half of the roll and serve immediately.
