- Shrimp, peeled and deveined - 300 grams
- Garlic, minced - 2 cloves
- Cilantro, chopped - 2 tablespoons
- Lime juice - 1 tablespoon
- Cornmeal - 3 tablespoons
- Egg - 1 large
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Bolillo rolls - 2
- Avocado, sliced - 1/2
- Tomato, sliced - 1 medium
- Lettuce leaves - 2
- Mayonnaise - 2 tablespoons
Steps
- In a food processor, combine the shrimp, garlic, cilantro, lime juice, cornmeal, egg, salt, black pepper, and cayenne pepper. Pulse until the mixture is well combined but still slightly chunky.
- Form the shrimp mixture into two patties, about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for 4-5 minutes on each side or until golden brown and cooked through.
- While the patties are cooking, lightly toast the bolillo rolls.
- Assemble the tortas by spreading mayonnaise on the bottom half of each roll, then adding the shrimp patty, avocado slices, tomato slices, and lettuce leaves.
- Top with the other half of the roll and serve immediately.
