Ingredients

  • Corn tortillas - 2 large
  • Fresh tilapia fillet - 200 grams
  • Lime juice - 60 ml
  • Red onion - 50 grams, finely diced
  • Tomato - 1 medium, diced
  • Cilantro - 20 grams, chopped
  • Avocado - 1 small, sliced
  • Cucumber - 50 grams, diced
  • Jalapeño - 1 small, finely chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Oaxaca cheese - 50 grams, crumbled (optional)

Steps

  1. Dice the fresh tilapia into small cubes and place in a bowl. Pour lime juice over the fish, ensuring it is fully submerged, and let it marinate in the refrigerator for about 15 minutes until it becomes opaque.
  2. While the fish is marinating, prepare the ceviche mix. In a separate bowl, combine the diced red onion, tomato, cilantro, cucumber, and jalapeño. Season with salt and pepper, and mix well.
  3. Once the fish is ready, drain excess lime juice and combine it with the ceviche mix. Toss gently to combine all ingredients and adjust seasoning if needed.
  4. In a skillet over medium heat, lightly toast each corn tortilla for about 1-2 minutes on each side until crispy but still pliable.
  5. Drizzle the toasted tortillas with olive oil and layer the ceviche mixture on top. Add slices of avocado and sprinkle with crumbled Oaxaca cheese if desired.
  6. Serve immediately and enjoy your Tlayudas con Ceviche!
