Ingredients

  • Corn tortillas - 2 large
  • Black beans - 1 cup, cooked and mashed
  • Oaxaca cheese - 150 grams, shredded
  • Avocado - 1, sliced
  • Tomato - 1 medium, diced
  • Red onion - 1/4, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Salsa verde - 4 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a small skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
  3. Spread the mashed black beans evenly over each corn tortilla, leaving a small border around the edge.
  4. Top the black beans with the sautéed onions, diced tomatoes, and half of the shredded Oaxaca cheese.
  5. Place the tlayudas on a baking sheet and bake in the preheated oven for about 10-12 minutes, or until the edges are crispy and the cheese is melted.
  6. Remove from the oven and top with sliced avocado, fresh cilantro, and a drizzle of salsa verde.
  7. Season with salt and pepper to taste, slice into wedges, and serve immediately.
