- Large corn tortillas - 2
- Black beans, cooked - 1 cup
- Zucchini, thinly sliced - 1 medium
- Red bell pepper, thinly sliced - 1 medium
- Red onion, thinly sliced - 1 medium
- Corn kernels - 1/2 cup
- Avocado, sliced - 1 medium
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro, chopped - 1/4 cup
- Lime wedges - 2
Steps
- Preheat your oven to 200°C (400°F).
- On a baking sheet, spread the sliced zucchini, red bell pepper, and red onion. Drizzle with olive oil, and sprinkle with cumin, paprika, salt, and pepper. Toss to coat well.
- Roast the vegetables in the preheated oven for 15-20 minutes, or until they are tender and slightly charred.
- While the vegetables are roasting, prepare the corn tortillas by placing them on another baking sheet. Bake them in the oven for about 5 minutes until they are crispy.
- Once the vegetables are done, take the tortillas out of the oven and spread a layer of black beans on each tortilla.
- Top the black beans with the roasted vegetables, corn kernels, and slices of avocado.
- Return the topped tortillas to the oven for an additional 5 minutes to warm everything through.
- Remove from the oven, garnish with chopped cilantro, and serve with lime wedges on the side.
