Ingredients

  • Cauliflower - 400 grams
  • Egg - 1 large
  • Mozzarella cheese - 100 grams, grated
  • Parmesan cheese - 50 grams, grated
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Oregano - 1 teaspoon
  • Chorizo - 100 grams, cooked and crumbled
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Sour cream - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Wash and chop the cauliflower into florets, then steam until tender, about 8-10 minutes.
  3. Drain the cauliflower and let it cool slightly before transferring to a food processor. Pulse until it resembles rice.
  4. In a bowl, combine the cauliflower rice, egg, mozzarella cheese, parmesan cheese, olive oil, salt, pepper, and oregano. Mix well until fully combined.
  5. On a baking sheet lined with parchment paper, shape the cauliflower mixture into a round pizza crust, about 1 cm thick.
  6. Bake the crust in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  7. While the crust is baking, prepare the toppings: cook the chorizo in a skillet until browned.
  8. Once the crust is ready, remove it from the oven and layer the cooked chorizo, halved cherry tomatoes, and sliced red onion on top.
  9. Return the pizza to the oven for an additional 5-7 minutes to warm the toppings.
  10. Remove from the oven, drizzle with sour cream, and garnish with fresh cilantro before serving.
