- Cauliflower - 400 grams
- Egg - 1 large
- Mozzarella cheese - 100 grams, grated
- Parmesan cheese - 50 grams, grated
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Pepper - 1/2 teaspoon
- Oregano - 1 teaspoon
- Chorizo - 100 grams, cooked and crumbled
- Cherry tomatoes - 100 grams, halved
- Red onion - 50 grams, thinly sliced
- Sour cream - 2 tablespoons
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 220°C (425°F).
- Wash and chop the cauliflower into florets, then steam until tender, about 8-10 minutes.
- Drain the cauliflower and let it cool slightly before transferring to a food processor. Pulse until it resembles rice.
- In a bowl, combine the cauliflower rice, egg, mozzarella cheese, parmesan cheese, olive oil, salt, pepper, and oregano. Mix well until fully combined.
- On a baking sheet lined with parchment paper, shape the cauliflower mixture into a round pizza crust, about 1 cm thick.
- Bake the crust in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- While the crust is baking, prepare the toppings: cook the chorizo in a skillet until browned.
- Once the crust is ready, remove it from the oven and layer the cooked chorizo, halved cherry tomatoes, and sliced red onion on top.
- Return the pizza to the oven for an additional 5-7 minutes to warm the toppings.
- Remove from the oven, drizzle with sour cream, and garnish with fresh cilantro before serving.
