Ingredients

  • Corn tortillas - 2 large (30 cm)
  • Olive oil - 2 tablespoons
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1 medium, sliced
  • Mushrooms - 100 grams, sliced
  • Red onion - 1 small, thinly sliced
  • Corn - 100 grams, cooked
  • Black beans - 100 grams, rinsed and drained
  • Oaxaca cheese - 100 grams, shredded
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine zucchini, red bell pepper, mushrooms, red onion, corn, olive oil, salt, and black pepper. Toss well to coat the vegetables.
  3. Spread the vegetable mixture evenly on a baking sheet and roast in the oven for 15 minutes, or until they are tender and slightly caramelized.
  4. While the vegetables are roasting, place the corn tortillas on another baking sheet and brush lightly with olive oil. Bake in the oven for about 5 minutes until they are crispy.
  5. Remove the roasted vegetables from the oven and evenly distribute them over the crispy tortillas.
  6. Sprinkle the black beans and shredded Oaxaca cheese on top of the vegetables.
  7. Return the tlayudas to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven, garnish with fresh cilantro, and serve with lime wedges on the side.
