Ingredients
- Corn tortillas - 2 large (30 cm)
- Olive oil - 2 tablespoons
- Zucchini - 1 medium, sliced
- Red bell pepper - 1 medium, sliced
- Mushrooms - 100 grams, sliced
- Red onion - 1 small, thinly sliced
- Corn - 100 grams, cooked
- Black beans - 100 grams, rinsed and drained
- Oaxaca cheese - 100 grams, shredded
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine zucchini, red bell pepper, mushrooms, red onion, corn, olive oil, salt, and black pepper. Toss well to coat the vegetables.
- Spread the vegetable mixture evenly on a baking sheet and roast in the oven for 15 minutes, or until they are tender and slightly caramelized.
- While the vegetables are roasting, place the corn tortillas on another baking sheet and brush lightly with olive oil. Bake in the oven for about 5 minutes until they are crispy.
- Remove the roasted vegetables from the oven and evenly distribute them over the crispy tortillas.
- Sprinkle the black beans and shredded Oaxaca cheese on top of the vegetables.
- Return the tlayudas to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh cilantro, and serve with lime wedges on the side.
