  • Large corn tortillas - 2

  • Oaxacan cheese or mozzarella, shredded - 100 grams
  • Refried black beans - 100 grams
  • Avocado, sliced - 1 medium
  • Tomato, diced - 1 medium
  • Red onion, thinly sliced - 1/2 small
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime, juiced - 1
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat the olive oil over medium heat. Add the shredded chicken and season with salt and pepper. Cook for 5 minutes until heated through.
  3. Spread a layer of refried black beans evenly on each corn tortilla.
  4. Top the tortillas with the cooked chicken, followed by the shredded Oaxacan cheese.
