- Oaxacan-style almond flour tortilla - 2 pieces
- Olive oil - 2 tablespoons
- Ripe tomatoes - 1 cup, diced
- Avocado - 1 medium, sliced
- Cooked chicken breast - 200 grams, shredded
- Oaxacan cheese or dairy-free cheese - 100 grams, shredded
- Fresh cilantro - 1/4 cup, chopped
- Red onion - 1/4 cup, thinly sliced
- Jalapeño - 1, thinly sliced
- Lime - 1, juiced
- Salt - 1/2 teaspoon
- Freshly ground black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- Brush each almond flour tortilla with 1 tablespoon of olive oil on one side, then place them on a baking sheet oiled side down.
- Spread the diced tomatoes evenly over each tortilla, and season with salt and pepper.
- Layer the shredded chicken, jalapeño slices, and red onion evenly on top of the tomatoes.
- Sprinkle the shredded Oaxacan cheese over the toppings.
- Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and the edges of the tortillas are crispy.
- Remove from the oven and let cool for a couple of minutes.
- Top each tlayuda with avocado slices, fresh cilantro, and a squeeze of lime juice before serving.
