Ingredients

  • Corn masa harina - 1 cup
  • Water - 3/4 cup
  • Salt - 1/2 teaspoon
  • Cooking oil - 2 tablespoons
  • Black beans (cooked and mashed) - 1 cup
  • Oaxaca cheese (shredded) - 150 grams
  • Sliced tomatoes - 1 medium
  • Avocado (sliced) - 1 small
  • Radishes (thinly sliced) - 4
  • Fresh cilantro (chopped) - 2 tablespoons
  • Salsa verde - 1/4 cup
  • Lime wedges - 2

Steps

  1. In a mixing bowl, combine corn masa harina, salt, and water. Mix until a soft dough forms.
  2. Divide the dough into two equal portions and shape each into a ball. Press each ball into a flat, round tortilla about 25 cm in diameter.
  3. Heat a non-stick skillet over medium-high heat and add 1 tablespoon of cooking oil. Cook each tortilla for about 2-3 minutes on each side until lightly browned and crispy. Remove from skillet and set aside.
  4. In the same skillet, add the mashed black beans, spreading them evenly over the surface of each tortilla. Cook for 2 minutes until warmed through.
  5. Sprinkle shredded Oaxaca cheese over the beans and cover the skillet for 1-2 minutes until the cheese melts.
  6. Remove the tlayudas from the skillet and top them with sliced tomatoes, avocado, radishes, and chopped cilantro.
  7. Drizzle with salsa verde and serve with lime wedges on the side.
