Ingredients
- Corn masa harina - 1 cup
- Water - 3/4 cup
- Salt - 1/2 teaspoon
- Cooking oil - 2 tablespoons
- Black beans (cooked and mashed) - 1 cup
- Oaxaca cheese (shredded) - 150 grams
- Sliced tomatoes - 1 medium
- Avocado (sliced) - 1 small
- Radishes (thinly sliced) - 4
- Fresh cilantro (chopped) - 2 tablespoons
- Salsa verde - 1/4 cup
- Lime wedges - 2
Steps
- In a mixing bowl, combine corn masa harina, salt, and water. Mix until a soft dough forms.
- Divide the dough into two equal portions and shape each into a ball. Press each ball into a flat, round tortilla about 25 cm in diameter.
- Heat a non-stick skillet over medium-high heat and add 1 tablespoon of cooking oil. Cook each tortilla for about 2-3 minutes on each side until lightly browned and crispy. Remove from skillet and set aside.
- In the same skillet, add the mashed black beans, spreading them evenly over the surface of each tortilla. Cook for 2 minutes until warmed through.
- Sprinkle shredded Oaxaca cheese over the beans and cover the skillet for 1-2 minutes until the cheese melts.
- Remove the tlayudas from the skillet and top them with sliced tomatoes, avocado, radishes, and chopped cilantro.
- Drizzle with salsa verde and serve with lime wedges on the side.
