  • Black beans (cooked) - 1 cup
  • Garlic (minced) - 1 clove
  • Cumin powder - 1/2 tsp
  • Oregano - 1/2 tsp
  • Red bell pepper (diced) - 1/2
  • Red onion (sliced) - 1/4
  • Avocado (sliced) - 1
  • Fresh cilantro (chopped) - 2 tbsp
  • Lime (juiced) - 1

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a large bowl, combine almond flour, tapioca flour, salt, and water to form a dough.
  3. Knead the dough for about 2-3 minutes until it is smooth and pliable.
  4. Divide the dough into two equal portions and roll each into a thin round shape, about 1/4 inch thick.
  5. Place the rolled dough on a baking sheet lined with parchment paper and brush with olive oil.
  6. Bake the dough in the preheated oven for 10-12 minutes or until it is crispy and lightly golden.
  7. In a small saucepan, heat the black beans over medium heat with minced garlic, cumin, and oregano until warmed through.
  8. Spread the seasoned black beans evenly over the baked crusts.
  9. Top with diced red bell pepper, sliced red onion, and any other desired toppings.
  10. Return the tlayudas to the oven and bake for an additional 5-7 minutes.
  11. Remove from the oven and top with sliced avocado, fresh cilantro, and a squeeze of lime juice before serving.
