  • Almond flour - 1 cup
  • Egg - 1 large
  • Mozzarella cheese (shredded) - 1 cup

  • Refried black beans (low-carb) - 1/2 cup
  • Cooked chicken (shredded) - 1 cup
  • Chopped fresh cilantro - 1/4 cup
  • Cherry tomatoes (halved) - 1/2 cup
  • Avocado (sliced) - 1/2 medium
  • Chili powder - 1 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime juice - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a mixing bowl, combine the almond flour, egg, and half of the mozzarella cheese. Mix until a dough forms.
  3. Spread the dough onto a baking sheet lined with parchment paper, shaping it into a large, thin round crust.
  4. Brush the crust with olive oil and bake for 10-12 minutes or until golden brown.
  5. Remove the crust from the oven and spread the refried black beans evenly over the top.
  6. Top the beans with the shredded chicken, remaining mozzarella cheese, cherry tomatoes, and sprinkle with chili powder, cumin, salt, and black pepper.
  7. Return the tlayuda to the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven, and let it cool slightly before adding sliced avocado and fresh cilantro.
  9. Drizzle with lime juice, slice, and serve warm.
