  • Egg - 1 large
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Cooked chicken (shredded) - 200 grams
  • Chipotle sauce - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Red onion (sliced) - 1/2 small
  • Fresh cilantro (chopped) - 2 tablespoons
  • Sour cream - 2 tablespoons
  • Lime - 1 (for serving)

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, baking powder, and salt. Mix until a dough forms.
  3. Spread the dough onto a baking sheet lined with parchment paper, shaping it into a pizza crust about 1/2 inch thick.
  4. Bake the crust in the preheated oven for 10-12 minutes, or until golden brown.
  5. While the crust is baking, heat olive oil in a pan over medium heat. Add the shredded chicken and chipotle sauce, stirring until the chicken is coated and heated through (about 5 minutes).
  6. Remove the crust from the oven and spread the chipotle chicken mixture evenly over the top.
  7. Top with sliced red onion and additional shredded mozzarella if desired.
  8. Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.
