Ingredients
- Shredded chicken - 200 grams
- Olive oil - 1 tablespoon
- Onion - 1 medium, thinly sliced
- Chipotle peppers in adobo sauce - 2 peppers, minced
- Tomato sauce - 100 grams (no added sugar)
- Garlic - 2 cloves, minced
- Oregano - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Almond flour - 1 cup
- Egg - 1 large
- Mozzarella cheese - 100 grams, shredded
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 220°C (428°F).
- In a skillet, heat the olive oil over medium heat and add the sliced onion. Cook until softened, about 5 minutes.
- Add the minced garlic, chipotle peppers, tomato sauce, oregano, cumin, salt, and black pepper to the skillet. Stir well and let it simmer for 5-7 minutes.
- Add the shredded chicken to the skillet, mixing until the chicken is well-coated in the sauce. Cook for an additional 5 minutes, then remove from heat.
- In a separate bowl, mix the almond flour, egg, and a pinch of salt to form a dough.
- On a parchment-lined baking sheet, press the dough into a round pizza shape, about 1/2 inch thick.
- Pre-bake the pizza crust in the preheated oven for 10 minutes or until slightly golden.
- Remove the crust from the oven and spread the tinga mixture evenly over the top.
- Sprinkle the shredded mozzarella cheese on top of the tinga.
- Return the pizza to the oven and bake for an additional 10 minutes or until the cheese is bubbly and golden.
- Garnish with fresh cilantro before slicing and serving.
