Ingredients

  • Chicken breast - 300 grams
  • Chipotle in adobo sauce - 2 tablespoons
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lettuce leaves (Romaine or Iceberg) - 4 large leaves
  • Avocado - 1 small, sliced
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. In a skillet, heat olive oil over medium heat. Add sliced onions and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Add the chicken breast to the skillet and cook until browned on both sides, about 6-7 minutes total.
  4. Shred the cooked chicken using two forks, then return it to the skillet.
  5. Stir in the chipotle in adobo sauce, cumin, oregano, salt, and black pepper. Mix well and let simmer for 10 minutes to allow flavors to meld.
  6. While the chicken is simmering, prepare the lettuce wraps by washing and drying the leaves.
  7. To assemble, place a generous scoop of the tinga chicken mixture onto each lettuce leaf.
  8. Top with avocado slices and garnish with fresh cilantro.
  9. Serve with lime wedges on the side for an extra burst of flavor.
