Ingredients

  • All-purpose flour - 100 grams
  • Baking powder - 5 grams
  • Baking soda - 1 gram
  • Salt - 1 gram
  • Almond milk - 120 ml
  • Coconut oil - 30 grams, melted
  • Maple syrup - 30 ml
  • Vanilla extract - 5 ml
  • Coconut milk - 100 ml
  • Soy milk - 100 ml
  • Almond milk (for soaking) - 80 ml
  • Coconut cream - 100 grams
  • Powdered sugar - 10 grams
  • Shredded coconut - for garnish

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small cake pan (approximately 15 cm in diameter).
  2. In a mixing bowl, combine the flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the almond milk, melted coconut oil, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Transfer the batter to the prepared cake pan and smooth the top with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the milk mixture by combining coconut milk, soy milk, and almond milk in a bowl.
  8. Once the cake is done, let it cool for about 10 minutes before transferring it to a plate.
  9. Poke holes all over the top of the cake using a skewer or fork and slowly pour the milk mixture over the cake, allowing it to soak in.
  10. Refrigerate the soaked cake for at least 1 hour to absorb the milk mixture.
  11. To prepare the topping, whip the coconut cream with powdered sugar until fluffy.
  12. Spread the whipped coconut cream over the soaked cake and garnish with shredded coconut before serving.
