Ingredients

  • Cream Cheese - 200 grams
  • Greek Yogurt - 100 grams
  • Coconut Flour - 30 grams
  • Erythritol - 50 grams
  • Eggs - 2 large
  • Vanilla Extract - 1 teaspoon
  • Baking Powder - 1/2 teaspoon
  • Lemon Zest - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 160°C (320°F) and grease a small round cake pan.
  2. In a mixing bowl, combine the cream cheese and Greek yogurt until smooth.
  3. Add the erythritol, eggs, vanilla extract, lemon zest, coconut flour, baking powder, and a pinch of salt. Mix until well combined.
  4. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  5. Bake for 30-35 minutes or until the center is set and the top is lightly golden.
  6. Remove from the oven and let it cool at room temperature for about 10 minutes before transferring it to the refrigerator to chill for at least 1 hour.
