Ingredients

  • Almond flour - 100 grams
  • Unsalted butter - 50 grams, melted
  • Erythritol - 30 grams
  • Egg - 1 large
  • Lime juice - 60 ml
  • Lime zest - 1 teaspoon
  • Cream cheese - 100 grams, softened
  • Heavy cream - 100 ml
  • Vanilla extract - 1 teaspoon
  • Baking powder - 1/2 teaspoon

Steps

  1. Preheat your oven to 175°C (350°F).
  2. In a mixing bowl, combine almond flour, melted butter, erythritol, and baking powder to form the crust mixture.
  3. Press the crust mixture into the bottom of a 20 cm tart pan evenly and bake for 10-12 minutes until golden. Remove from the oven and let it cool.
  4. In a separate bowl, beat together the softened cream cheese, heavy cream, lime juice, lime zest, erythritol, and vanilla extract until smooth and creamy.
  5. Add the egg to the mixture and blend until fully incorporated.
  6. Pour the filling over the cooled crust and spread evenly.
  7. Bake the tart in the preheated oven for an additional 20-25 minutes, or until the filling is set and slightly firm to the touch.
  8. Allow the tart to cool to room temperature, then refrigerate for at least 2 hours before serving.
