Ingredients

  • Almond flour - 100g
  • Coconut oil - 30g
  • Maple syrup - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Cashews (soaked) - 100g
  • Coconut milk - 100ml
  • Vanilla extract - 1 teaspoon
  • Fresh fruits (assorted, e.g., strawberries, kiwi, mango) - 200g
  • Agave syrup (for drizzling) - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt until a dough forms.
  3. Press the dough evenly into the bottom and sides of a tart pan. Prick the bottom with a fork.
  4. Bake the crust for 15-20 minutes until lightly golden. Remove from the oven and let it cool.
  5. In a blender, combine soaked cashews, coconut milk, and vanilla extract. Blend until smooth and creamy.
  6. Pour the cashew cream into the cooled tart crust and spread it evenly.
  7. Chill the tart in the refrigerator for at least 15 minutes to set.
  8. Slice the fresh fruits and arrange them artistically on top of the cashew cream.
  9. Drizzle agave syrup over the fruits for added sweetness and serve.
