Ingredients

- Coconut oil - 30g
- Maple syrup - 2 tablespoons
- Salt - 1/4 teaspoon
- Cashews (soaked) - 100g
- Coconut milk - 100ml
- Vanilla extract - 1 teaspoon
- Fresh fruits (assorted, e.g., strawberries, kiwi, mango) - 200g
- Agave syrup (for drizzling) - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt until a dough forms.
- Press the dough evenly into the bottom and sides of a tart pan. Prick the bottom with a fork.
- Bake the crust for 15-20 minutes until lightly golden. Remove from the oven and let it cool.
- In a blender, combine soaked cashews, coconut milk, and vanilla extract. Blend until smooth and creamy.
- Pour the cashew cream into the cooled tart crust and spread it evenly.
- Chill the tart in the refrigerator for at least 15 minutes to set.
- Slice the fresh fruits and arrange them artistically on top of the cashew cream.
- Drizzle agave syrup over the fruits for added sweetness and serve.
