Ingredients

  • Beef flank steak - 300 grams
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Corn tortillas - 4
  • Shredded cheese (cheddar or Oaxaca) - 100 grams
  • Guacamole - 100 grams

Steps

  1. In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, black pepper, and chopped cilantro to create a marinade.
  2. Place the flank steak in the marinade, ensuring it is well-coated, and let it marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the steak from the marinade and grill for about 4-5 minutes on each side, or until it reaches your desired doneness.
  5. Once cooked, let the steak rest for 5 minutes before slicing it thinly against the grain.
  6. While the steak is resting, warm the corn tortillas on the grill for about 30 seconds on each side.
  7. To assemble, place some sliced steak on each tortilla, top with shredded cheese, and serve with a side of guacamole.
