Steps

  1. In a mixing bowl, combine the tamarind pulp, agave syrup, sugar, chili powder, and salt. Mix until well combined.
  2. Transfer the mixture to a small saucepan and cook over low heat, stirring continuously for about 10-15 minutes until it thickens and pulls away from the sides of the pan.
  3. Remove the saucepan from heat and let the mixture cool slightly until it is warm but manageable.
  4. Dust a clean surface with cornstarch to prevent sticking. Place the mixture on the cornstarch-dusted surface and knead it for a minute to make it smooth.
  5. Shape the tamarind mixture into small balls or flatten it into a square and cut it into bite-sized pieces.
  6. Allow the candies to cool completely before serving. You can dust them with a little more cornstarch to prevent sticking.
