Ingredients
- Dried corn husks - 10 pieces
- Masa harina - 1 cup
- Vegetable broth - 1/2 cup
- Olive oil - 2 tablespoons
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Green tomatillos - 200 grams, husked and quartered
- Jalapeño - 1 small, seeded and chopped
- Garlic - 2 cloves, minced
- Cilantro - 1/4 cup, chopped
- Black beans - 1/2 cup, cooked and drained
- Corn kernels - 1/2 cup, fresh or frozen
Steps
- Soak the dried corn husks in warm water for at least 30 minutes to soften.
- In a pot, combine the tomatillos, jalapeño, and garlic with enough water to cover. Boil for about 10 minutes until softened.
- Drain the cooked vegetables and blend them with cilantro until smooth to make the green salsa. Set aside.
- In a mixing bowl, combine masa harina, baking powder, salt, olive oil, and vegetable broth. Mix until a dough forms.
- Take a soaked corn husk and spread about 2 tablespoons of masa dough onto the wide end, leaving about an inch border. Add a spoonful of black beans and corn on top of the masa, then drizzle with green salsa.
- Fold the sides of the corn husk over the filling, then roll from the bottom to secure the tamale. Repeat with all husks and filling.
- Preheat the oven to 180°C (350°F). Arrange the tamales upright in a baking dish and pour any remaining green salsa over the top.
- Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until set.
- Let the tamales cool slightly before serving. Enjoy with extra salsa and cilantro on top.
