Ingredients

  • Masa harina - 1 cup
  • Vegetable broth - 1 cup
  • Olive oil - 2 tablespoons
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Red chili sauce - 1/2 cup
  • Zucchini - 1 small, diced
  • Corn kernels - 1/2 cup (fresh or frozen)
  • Red bell pepper - 1/2, diced
  • Onion - 1/4, finely chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Corn husks - 10, soaked in warm water

Steps

  1. Soak the corn husks in warm water for at least 30 minutes to soften.
  2. In a large bowl, mix masa harina, baking powder, and salt.
  3. Gradually add vegetable broth and olive oil, mixing until a smooth dough forms.
  4. In a separate bowl, combine zucchini, corn, red bell pepper, onion, cilantro, and red chili sauce.
  5. Take a corn husk and spread about 2 tablespoons of the masa dough onto the center, flatten it slightly.
  6. Add a spoonful of the vegetable filling on top of the masa.
  7. Fold the sides of the corn husk over the filling, then fold the bottom up to secure the tamale.
  8. Repeat with the remaining husks and filling.
  9. Place the tamales upright in a steamer basket, cover with a damp cloth, and steam for about 60 minutes or until the masa is firm.
  10. Serve hot with extra red chili sauce on the side.
