- Masa harina - 1 cup
- Vegetable broth - 1 cup
- Olive oil - 2 tablespoons
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Red chili sauce - 1/2 cup
- Zucchini - 1 small, diced
- Corn kernels - 1/2 cup (fresh or frozen)
- Red bell pepper - 1/2, diced
- Onion - 1/4, finely chopped
- Fresh cilantro - 2 tablespoons, chopped
- Corn husks - 10, soaked in warm water
Steps
- Soak the corn husks in warm water for at least 30 minutes to soften.
- In a large bowl, mix masa harina, baking powder, and salt.
- Gradually add vegetable broth and olive oil, mixing until a smooth dough forms.
- In a separate bowl, combine zucchini, corn, red bell pepper, onion, cilantro, and red chili sauce.
- Take a corn husk and spread about 2 tablespoons of the masa dough onto the center, flatten it slightly.
- Add a spoonful of the vegetable filling on top of the masa.
- Fold the sides of the corn husk over the filling, then fold the bottom up to secure the tamale.
- Repeat with the remaining husks and filling.
- Place the tamales upright in a steamer basket, cover with a damp cloth, and steam for about 60 minutes or until the masa is firm.
- Serve hot with extra red chili sauce on the side.
