Ingredients
- Masa harina - 250 grams
- Vegetable broth - 300 milliliters
- Baking powder - 1 teaspoon
- Salt - 1 teaspoon
- Poblano peppers - 2 medium
- Onion - 1 small, diced
- Oaxaca cheese or mozzarella - 150 grams, shredded
- Vegetable oil - 2 tablespoons
- Corn husks - 10, soaked in warm water
Steps
- Soak the corn husks in warm water for about 30 minutes to soften.
- Roast the poblano peppers over an open flame or under the broiler until the skin is charred and blistered. Place them in a plastic bag for 10 minutes, then peel off the skin, remove the seeds, and slice into strips.
- In a skillet, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the roasted poblano strips and cook together for another 2-3 minutes. Remove from heat and let cool.
- In a bowl, mix the masa harina, baking powder, salt, and vegetable broth until a soft dough forms. The dough should be moist but not sticky.
- Take a soaked corn husk and spread about 2 tablespoons of masa dough onto the center, leaving space at the edges. Add a spoonful of the poblano and onion mixture and a sprinkle of cheese on top of the masa. Fold the sides of the husk over the filling, then fold the bottom up to secure it. Repeat with remaining husks and filling.
- Place the tamales upright in a steamer pot, standing them on their folded ends. Cover with a damp cloth and steam over simmering water for about 60 minutes, or until the masa pulls away from the husk easily.
- Once cooked, let the tamales rest for a few minutes before serving. Enjoy them warm, garnished with salsa or avocado.
