Ingredients
- Fresh corn kernels - 1 cup
- Cornmeal - 1/2 cup
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Almond milk (or any milk of choice) - 1/2 cup
- Coconut oil, melted - 2 tbsp
- Fresh cilantro, chopped - 2 tbsp
- Cotija cheese, crumbled - 1/4 cup (optional)
- Banana leaves or corn husks - for wrapping
Steps
- Soak the banana leaves or corn husks in warm water for 30 minutes to soften them.
- In a blender, combine the fresh corn kernels, cornmeal, baking powder, salt, almond milk, and melted coconut oil. Blend until the mixture is smooth but still has some texture.
- Fold in the chopped cilantro and crumbled Cotija cheese if using.
- Take a soaked banana leaf or corn husk and place about 2-3 tablespoons of the corn mixture in the center. Fold the sides in and roll up tightly, then tie with kitchen twine or a strip of the husk.
- Repeat until all the mixture is used, then place the tamales upright in a steamer basket.
- Steam the tamales over simmering water for about 40-45 minutes, or until the masa separates easily from the husk.
- Remove from the steamer and let cool slightly before serving. Enjoy warm, garnished with extra cilantro or cheese if desired.
