- Whole wheat pizza dough - 200 grams
- Black beans - 1 cup (240 grams), cooked and mashed
- Corn - 1/2 cup (75 grams), canned or frozen
- Red bell pepper - 1/2 cup (75 grams), diced
- Red onion - 1/4 cup (40 grams), diced
- Olive oil - 1 tablespoon (15 ml)
- Cumin - 1 teaspoon (5 grams)
- Chili powder - 1 teaspoon (5 grams)
- Salt - 1/2 teaspoon (3 grams)
- Vegan cheese - 1/2 cup (60 grams), shredded
- Avocado - 1 medium (150 grams), for sauce
- Lime juice - 1 tablespoon (15 ml)
- Cilantro - 2 tablespoons (5 grams), chopped
- Jalapeño - 1 tablespoon (5 grams), sliced (optional)
Steps
- Preheat the oven to 220°C (425°F).
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
- Transfer the dough to a baking sheet lined with parchment paper.
- In a bowl, mix the mashed black beans with cumin, chili powder, salt, and olive oil until well combined.
- Spread the black bean mixture evenly over the pizza dough as the base sauce.
- Top the pizza with corn, diced red bell pepper, and red onion.
- Sprinkle the vegan cheese over the top of the vegetables.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is melted.
- While the pizza is baking, prepare the avocado sauce by blending the avocado, lime juice, and a pinch of salt until smooth.
- Once the pizza is done, remove it from the oven and drizzle with the avocado sauce.
- Garnish with chopped cilantro and sliced jalapeño if desired.
- Slice and serve hot.
