Ingredients
- Fresh corn kernels - 2 cups (about 3 ears of corn)
- Cornmeal (masa harina) - 1/2 cup
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Agave syrup - 2 tablespoons
- Non-dairy milk (such as almond or oat) - 1/2 cup
- Fresh cilantro - 1/4 cup, chopped
- Corn husks - 6-8 soaked in warm water
Steps
- Soak the corn husks in warm water for at least 30 minutes to soften them.
- In a blender, combine the fresh corn kernels and non-dairy milk, blending until smooth.
- In a large bowl, mix together the cornmeal, baking powder, and salt.
- Add the blended corn mixture, vegetable oil, and agave syrup to the dry ingredients, stirring until well combined.
- Fold in the chopped cilantro for added flavor.
- Take a soaked corn husk, and place about 2-3 tablespoons of the tamale mixture in the center, fold the sides over the filling, and then fold the bottom up to enclose the tamale.
- Repeat until all the mixture is used, then place the tamales upright in a steamer basket.
- Steam the tamales for about 30-35 minutes, or until the dough is firm and pulls away easily from the husk.
- Remove from the steamer and let cool slightly before serving.
