Ingredients

  • Fresh corn kernels - 2 cups (about 3 ears of corn)
  • Cornmeal (masa harina) - 1/2 cup
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Agave syrup - 2 tablespoons
  • Non-dairy milk (such as almond or oat) - 1/2 cup
  • Fresh cilantro - 1/4 cup, chopped
  • Corn husks - 6-8 soaked in warm water

Steps

  1. Soak the corn husks in warm water for at least 30 minutes to soften them.
  2. In a blender, combine the fresh corn kernels and non-dairy milk, blending until smooth.
  3. In a large bowl, mix together the cornmeal, baking powder, and salt.
  4. Add the blended corn mixture, vegetable oil, and agave syrup to the dry ingredients, stirring until well combined.
  5. Fold in the chopped cilantro for added flavor.
  6. Take a soaked corn husk, and place about 2-3 tablespoons of the tamale mixture in the center, fold the sides over the filling, and then fold the bottom up to enclose the tamale.
  7. Repeat until all the mixture is used, then place the tamales upright in a steamer basket.
  8. Steam the tamales for about 30-35 minutes, or until the dough is firm and pulls away easily from the husk.
  9. Remove from the steamer and let cool slightly before serving.
