Ingredients

  • Masa harina - 1 cup
  • Coconut milk - 1/2 cup
  • Brown sugar - 1/4 cup
  • Baking powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Corn husks - 6 (soaked in warm water for 30 minutes)

Steps

  1. Soak the corn husks in warm water for at least 30 minutes to soften them.
  2. In a mixing bowl, combine the masa harina, brown sugar, baking powder, cinnamon, salt, and vanilla extract.
  3. Gradually add the coconut milk to the dry ingredients, mixing until a soft dough forms.
  4. Take a soaked corn husk and spread about 2 tablespoons of the masa dough onto the center of the husk.
  5. Fold the sides of the corn husk over the masa and then fold the bottom up to secure the tamale.
  6. Repeat the process for the remaining husks and masa dough.
  7. Place the tamales upright in a steamer basket and steam for about 45 minutes, or until the masa is firm and cooked through.
  8. Allow the tamales to cool slightly before serving. Enjoy them warm!
