- Masa harina - 1 cup
- Coconut milk - 1/2 cup
- Brown sugar - 1/4 cup
- Baking powder - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - 1/4 teaspoon
- Corn husks - 6 (soaked in warm water for 30 minutes)
Steps
- Soak the corn husks in warm water for at least 30 minutes to soften them.
- In a mixing bowl, combine the masa harina, brown sugar, baking powder, cinnamon, salt, and vanilla extract.
- Gradually add the coconut milk to the dry ingredients, mixing until a soft dough forms.
- Take a soaked corn husk and spread about 2 tablespoons of the masa dough onto the center of the husk.
- Fold the sides of the corn husk over the masa and then fold the bottom up to secure the tamale.
- Repeat the process for the remaining husks and masa dough.
- Place the tamales upright in a steamer basket and steam for about 45 minutes, or until the masa is firm and cooked through.
- Allow the tamales to cool slightly before serving. Enjoy them warm!
