Ingredients

  • Masa harina - 150 grams
  • Water - 150 ml
  • Coconut oil - 30 grams (melted)
  • Baking powder - 1 teaspoon
  • Agave syrup - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Mixed fresh fruits (such as mango, pineapple, and strawberries) - 200 grams (chopped)
  • Corn husks - 6 to 8 (soaked in warm water)

Steps

  1. Soak the corn husks in warm water for about 30 minutes to soften them.
  2. In a mixing bowl, combine masa harina, baking powder, cinnamon, and a pinch of salt.
  3. In another bowl, mix the melted coconut oil, agave syrup, and water. Gradually add this mixture to the dry ingredients, mixing until a dough forms.
  4. Take a soaked corn husk and spread a tablespoon of masa dough onto the center, leaving space on the sides.
  5. Place a tablespoon of the mixed chopped fruits on top of the masa.
  6. Fold the sides of the husk over the masa and fruit, then fold the bottom up to secure the filling.
  7. Repeat the process for the remaining husks and filling.
  8. Place the tamales upright in a steamer pot. Fill the bottom with water and steam the tamales for about 30-40 minutes, or until the masa separates easily from the husk.
  9. Remove the tamales from the steamer and let them cool slightly before serving.
