  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Lime wedges - for serving

Steps

  1. In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  2. Add the sliced zucchini, red bell pepper, carrot, and mushrooms to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
  3. Stir in the spinach, cumin, salt, and black pepper. Cook for an additional 2 minutes until the spinach is wilted.
  4. While the vegetables are cooking, fill a steamer pot with water and bring it to a boil.
  5. Wrap the corn tortillas in a clean kitchen towel and place them in the steamer basket. Steam for about 5 minutes until warm and pliable.
  6. Remove the tortillas from the steamer, and fill each one with the sautéed vegetable mixture.
  7. Garnish with fresh cilantro and serve with lime wedges on the side.
