Steps
- In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the sliced zucchini, red bell pepper, carrot, and mushrooms to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
- Stir in the spinach, cumin, salt, and black pepper. Cook for an additional 2 minutes until the spinach is wilted.
- While the vegetables are cooking, fill a steamer pot with water and bring it to a boil.
- Wrap the corn tortillas in a clean kitchen towel and place them in the steamer basket. Steam for about 5 minutes until warm and pliable.
- Remove the tortillas from the steamer, and fill each one with the sautéed vegetable mixture.
- Garnish with fresh cilantro and serve with lime wedges on the side.
