- Chipotle in adobo sauce - 2 tablespoons
- Garlic (minced) - 1 clove
- Lime - 1 (for juice)
- Corn Tortillas - 4
- Fresh Cilantro - for garnish

Steps
- Preheat your grill or a grill pan over medium-high heat.
- In a bowl, combine the sliced zucchini, bell pepper, mushrooms, and red onion.
