  • Chipotle in adobo sauce - 2 tablespoons
  • Garlic (minced) - 1 clove
  • Lime - 1 (for juice)
  • Corn Tortillas - 4
  • Fresh Cilantro - for garnish
  • Salt - to taste

Steps

  1. Preheat your grill or a grill pan over medium-high heat.
  2. In a bowl, combine the sliced zucchini, bell pepper, mushrooms, and red onion.
