- Zucchini - 1 medium (about 200g), diced
- Spinach - 100g, fresh
- Red onion - 1 small (about 70g), diced
- Avocado - 1 medium (about 150g), sliced
- Olive oil - 1 tablespoon (15ml)
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lime - 1, juiced
- Cilantro - a handful, chopped for garnish
Steps
- Heat the olive oil in a skillet over medium heat.
- Add the diced red onion and sauté for about 2-3 minutes until translucent.
- Stir in the diced bell pepper and zucchini; cook for another 5 minutes until slightly softened.
- Add the black beans, cumin, salt, and pepper; cook for another 5 minutes until heated through.
- Fold in the fresh spinach and cook until wilted, about 2 minutes.
- Warm the corn tortillas in a separate pan or microwave until pliable.
- To assemble, place a generous spoonful of the vegetable mixture onto each tortilla.
- Top with sliced avocado, a squeeze of lime juice, and chopped cilantro.
