  • Black beans - 200g, cooked and drained
  • Bell pepper - 1 medium (about 150g), diced
  • Zucchini - 1 medium (about 200g), diced
  • Spinach - 100g, fresh
  • Red onion - 1 small (about 70g), diced
  • Avocado - 1 medium (about 150g), sliced
  • Olive oil - 1 tablespoon (15ml)
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lime - 1, juiced
  • Cilantro - a handful, chopped for garnish

Steps

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced red onion and sauté for about 2-3 minutes until translucent.
  3. Stir in the diced bell pepper and zucchini; cook for another 5 minutes until slightly softened.
  4. Add the black beans, cumin, salt, and pepper; cook for another 5 minutes until heated through.
  5. Fold in the fresh spinach and cook until wilted, about 2 minutes.
  6. Warm the corn tortillas in a separate pan or microwave until pliable.
  7. To assemble, place a generous spoonful of the vegetable mixture onto each tortilla.
  8. Top with sliced avocado, a squeeze of lime juice, and chopped cilantro.
  9. Serve immediately and enjoy your nutritious breakfast tacos.
