Ingredients
- Beef tripe - 300 grams
- Corn tortillas - 4 pieces
- Vegetable oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
- Salt - to taste
- Black pepper - to taste
- Salsa verde - for serving
Steps
- Clean the beef tripe thoroughly under cold running water, then cut it into manageable pieces.
- In a large pot, bring water to a boil and add the tripe. Cook for about 30 minutes until tender, skimming off any foam that forms.
- Drain the tripe and let it cool slightly before chopping it into bite-sized pieces.
- In a skillet, heat the vegetable oil over medium-high heat. Add the minced garlic and diced onion, sautéing until the onion becomes translucent.
- Add the chopped tripe to the skillet, season with salt and black pepper, and cook for an additional 10-15 minutes until the tripe is crispy and golden brown.
- Warm the corn tortillas on a separate skillet or grill until pliable.
- Assemble the tacos by placing a portion of the crispy tripe on each tortilla. Top with chopped cilantro and serve with lime wedges and salsa verde.
