Ingredients

  • Beef tripe - 300 grams
  • Corn tortillas - 4 pieces
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste
  • Black pepper - to taste
  • Salsa verde - for serving

Steps

  1. Clean the beef tripe thoroughly under cold running water, then cut it into manageable pieces.
  2. In a large pot, bring water to a boil and add the tripe. Cook for about 30 minutes until tender, skimming off any foam that forms.
  3. Drain the tripe and let it cool slightly before chopping it into bite-sized pieces.
  4. In a skillet, heat the vegetable oil over medium-high heat. Add the minced garlic and diced onion, sautéing until the onion becomes translucent.
  5. Add the chopped tripe to the skillet, season with salt and black pepper, and cook for an additional 10-15 minutes until the tripe is crispy and golden brown.
  6. Warm the corn tortillas on a separate skillet or grill until pliable.
  7. Assemble the tacos by placing a portion of the crispy tripe on each tortilla. Top with chopped cilantro and serve with lime wedges and salsa verde.
