  • Soy sauce - 2 tablespoons
  • Chipotle in adobo sauce - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Corn tortillas - 4 pieces
  • Red onion - 50 grams, diced
  • Cilantro - 30 grams, chopped
  • Lime - 1, cut into wedges
  • Salt - to taste

Steps

  1. Press the tofu to remove excess moisture for about 15 minutes, then cut it into thin slices.
  2. In a bowl, whisk together olive oil, soy sauce, chipotle in adobo, cumin, oregano, garlic powder, onion powder, and salt to create the marinade.
  3. Add the sliced tofu to the marinade, ensuring each piece is well-coated. Let it marinate for at least 10 minutes.
  4. Preheat a grill or grill pan over medium heat. Grill the marinated tofu slices for about 5-7 minutes on each side until they develop grill marks and are heated through.
  5. In the last minute of grilling, add the diced pineapple to the grill to caramelize slightly.
  6. While the tofu is grilling, warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.
  7. Assemble the tacos by placing grilled tofu and caramelized pineapple in each tortilla. Top with diced red onion and chopped cilantro.
  8. Serve with lime wedges on the side for squeezing over the tacos.
