- Oregano - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Corn tortillas - 4 pieces
- Red onion - 50 grams, diced
- Cilantro - 30 grams, chopped
- Lime - 1, cut into wedges
- Salt - to taste
Steps
- Press the tofu to remove excess moisture for about 15 minutes, then cut it into thin slices.
- In a bowl, whisk together olive oil, soy sauce, chipotle in adobo, cumin, oregano, garlic powder, onion powder, and salt to create the marinade.
- Add the sliced tofu to the marinade, ensuring each piece is well-coated. Let it marinate for at least 10 minutes.
- Preheat a grill or grill pan over medium heat. Grill the marinated tofu slices for about 5-7 minutes on each side until they develop grill marks and are heated through.
- In the last minute of grilling, add the diced pineapple to the grill to caramelize slightly.
- While the tofu is grilling, warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.
- Assemble the tacos by placing grilled tofu and caramelized pineapple in each tortilla. Top with diced red onion and chopped cilantro.
- Serve with lime wedges on the side for squeezing over the tacos.
