Ingredients
- Beef chuck roast - 400 grams
- Olive oil - 1 tablespoon
- Onion - 1 medium, sliced
- Garlic - 3 cloves, minced
- Tomato - 2 medium, diced
- Chipotle in adobo sauce - 1 tablespoon
- Chicken broth - 200 ml
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lettuce leaves - 4 large, for serving
- Avocado - 1 medium, sliced
- Cilantro - a handful, chopped
Steps
- In a large pot, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Season the beef chuck roast with salt and pepper, then add it to the pot. Sear on all sides until browned, about 5-7 minutes.
- Stir in the diced tomatoes, chipotle in adobo, chicken broth, cumin, and oregano. Bring to a simmer.
- Cover the pot and reduce the heat to low. Cook for about 45 minutes, or until the beef is tender and easily shreds with a fork.
- Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot, stirring to combine with the sauce. Cook for an additional 5 minutes.
- To serve, place a portion of the tinga mixture onto a lettuce leaf, top with sliced avocado and chopped cilantro.
