Ingredients

  • Beef chuck roast - 400 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, sliced
  • Garlic - 3 cloves, minced
  • Tomato - 2 medium, diced
  • Chipotle in adobo sauce - 1 tablespoon
  • Chicken broth - 200 ml
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lettuce leaves - 4 large, for serving
  • Avocado - 1 medium, sliced
  • Cilantro - a handful, chopped

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Season the beef chuck roast with salt and pepper, then add it to the pot. Sear on all sides until browned, about 5-7 minutes.
  4. Stir in the diced tomatoes, chipotle in adobo, chicken broth, cumin, and oregano. Bring to a simmer.
  5. Cover the pot and reduce the heat to low. Cook for about 45 minutes, or until the beef is tender and easily shreds with a fork.
  6. Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot, stirring to combine with the sauce. Cook for an additional 5 minutes.
  7. To serve, place a portion of the tinga mixture onto a lettuce leaf, top with sliced avocado and chopped cilantro.
