Ingredients

  • Suadero beef - 300 grams
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Corn tortillas - 4
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Radishes - 4, thinly sliced
  • Salsa (your choice) - to taste

Steps

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, sauté until softened and fragrant, about 3-4 minutes.
  2. Add the suadero beef to the pot, followed by cumin, black pepper, and salt. Cook for 5 minutes, stirring occasionally.
  3. Pour enough water into the pot to cover the beef (about 1 to 1.5 cups). Bring to a boil, then reduce heat to low and cover. Simmer for 45 minutes until the beef is tender.
  4. Remove the beef from the pot and shred it using two forks. If desired, return shredded beef to the pot for a few more minutes to absorb the flavors.
  5. Warm the corn tortillas on a skillet or directly over a flame until pliable.
  6. Assemble the tacos by placing the shredded suadero beef on each tortilla. Top with chopped cilantro, sliced radishes, and a drizzle of your favorite salsa.
  7. Serve with lime wedges on the side for an extra burst of freshness.
