Ingredients
- Suadero beef - 300 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Vegetable oil - 2 tablespoons
- Corn tortillas - 4
- Cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Radishes - 4, thinly sliced
- Salsa (your choice) - to taste
Steps
- In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, sauté until softened and fragrant, about 3-4 minutes.
- Add the suadero beef to the pot, followed by cumin, black pepper, and salt. Cook for 5 minutes, stirring occasionally.
- Pour enough water into the pot to cover the beef (about 1 to 1.5 cups). Bring to a boil, then reduce heat to low and cover. Simmer for 45 minutes until the beef is tender.
- Remove the beef from the pot and shred it using two forks. If desired, return shredded beef to the pot for a few more minutes to absorb the flavors.
- Warm the corn tortillas on a skillet or directly over a flame until pliable.
- Assemble the tacos by placing the shredded suadero beef on each tortilla. Top with chopped cilantro, sliced radishes, and a drizzle of your favorite salsa.
- Serve with lime wedges on the side for an extra burst of freshness.
