- Pumpkin seeds - 100 grams
- Corn tortillas - 4 pieces
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Olive oil - 1 tablespoon
- Salt - to taste
- Chili powder - 1 teaspoon
Steps
- Preheat a skillet over medium heat.
- Add the pumpkin seeds to the skillet and toast them for 5-7 minutes, stirring occasionally until they are golden brown and fragrant.
- Remove the toasted pumpkin seeds from the skillet and let them cool for a few minutes.
- In the same skillet, add olive oil and sauté the minced garlic and chopped red onion until translucent, about 3-4 minutes.
- Once cooled, roughly chop the toasted pumpkin seeds and add them to the skillet with the sautéed onion and garlic.
- Stir in the chopped cilantro, lime juice, chili powder, and salt. Mix well and cook for an additional 2-3 minutes to combine the flavors.
- Heat the corn tortillas in a separate dry skillet for about 30 seconds on each side until warm.
- Spoon the pumpkin seed mixture onto each tortilla, fold them in half, and serve immediately.
