Ingredients

  • Flank steak - 300 grams
  • Olive oil - 1 tablespoon
  • Yellow onion - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Bay leaf - 1
  • Vegetable broth - 500 ml
  • Salt - to taste
  • Black pepper - to taste
  • Corn tortillas - 4 small
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges
  • Avocado - 1, sliced

Steps

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and red bell pepper, and sauté for about 5 minutes until softened.
  2. Add the minced garlic, cumin, oregano, salt, and black pepper to the pot, stirring for another minute until fragrant.
  3. Add the flank steak, vegetable broth, and bay leaf to the pot. Bring to a boil, then reduce the heat to low and cover. Let simmer for about 60-75 minutes, or until the beef is tender and easily shreds with a fork.
  4. Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot and mix it with the cooking liquid, cooking for an additional 5 minutes to combine the flavors.
  5. While the beef is simmering, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
  6. To assemble the tacos, place a portion of the ropa vieja on each tortilla. Top with fresh cilantro and slices of avocado, and serve with lime wedges on the side.
