- Flank steak - 300 grams
- Olive oil - 1 tablespoon
- Yellow onion - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Bay leaf - 1
- Vegetable broth - 500 ml
- Salt - to taste
- Black pepper - to taste
- Corn tortillas - 4 small
- Fresh cilantro - for garnish
- Lime - 1, cut into wedges
- Avocado - 1, sliced
Steps
- In a large pot, heat olive oil over medium heat. Add the diced onion and red bell pepper, and sauté for about 5 minutes until softened.
- Add the minced garlic, cumin, oregano, salt, and black pepper to the pot, stirring for another minute until fragrant.
- Add the flank steak, vegetable broth, and bay leaf to the pot. Bring to a boil, then reduce the heat to low and cover. Let simmer for about 60-75 minutes, or until the beef is tender and easily shreds with a fork.
- Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot and mix it with the cooking liquid, cooking for an additional 5 minutes to combine the flavors.
- While the beef is simmering, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
- To assemble the tacos, place a portion of the ropa vieja on each tortilla. Top with fresh cilantro and slices of avocado, and serve with lime wedges on the side.
