- Tomatillos - 200 grams
- Jalapeño pepper - 1 medium
- Garlic cloves - 2
- Cilantro - 15 grams
- Onion - 1 small
- Lime - 1
- Corn tortillas - 4
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Start by boiling the tomatillos and jalapeño in a pot of water for about 10 minutes until soft. Drain and set aside.
- In a blender, combine the boiled tomatillos, jalapeño, garlic cloves, and a handful of cilantro. Blend until smooth and set aside.
- Season the beef flank steak with salt and pepper. Heat olive oil in a skillet over medium heat and sear the steak for about 3-4 minutes on each side until browned.
- Remove the steak from the skillet and let it rest for a few minutes before slicing it thinly against the grain.
- In the same skillet, pour the salsa verde mixture and let it simmer for about 5 minutes. Add the sliced beef to the skillet and cook for an additional 5-7 minutes, allowing the flavors to meld.
- Warm the corn tortillas in a separate pan or microwave for a few seconds until pliable.
- Assemble the tacos by placing the beef and salsa verde on each tortilla. Top with finely chopped onion, cilantro, and a squeeze of lime juice.
