Ingredients

  • Beef flank steak - 250 grams
  • Tomatillos - 200 grams
  • Jalapeño pepper - 1 medium
  • Garlic cloves - 2
  • Cilantro - 15 grams
  • Onion - 1 small
  • Lime - 1
  • Corn tortillas - 4
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Start by boiling the tomatillos and jalapeño in a pot of water for about 10 minutes until soft. Drain and set aside.
  2. In a blender, combine the boiled tomatillos, jalapeño, garlic cloves, and a handful of cilantro. Blend until smooth and set aside.
  3. Season the beef flank steak with salt and pepper. Heat olive oil in a skillet over medium heat and sear the steak for about 3-4 minutes on each side until browned.
  4. Remove the steak from the skillet and let it rest for a few minutes before slicing it thinly against the grain.
  5. In the same skillet, pour the salsa verde mixture and let it simmer for about 5 minutes. Add the sliced beef to the skillet and cook for an additional 5-7 minutes, allowing the flavors to meld.
  6. Warm the corn tortillas in a separate pan or microwave for a few seconds until pliable.
  7. Assemble the tacos by placing the beef and salsa verde on each tortilla. Top with finely chopped onion, cilantro, and a squeeze of lime juice.
